White Fungus Salad

"Tremella fuciformis" which is also known as white fungus or snow fungus mushroom with many other name has many benefit. In Burma we enjoy them in soup or as a salad.

Today I will share with you the typical White Fungus Salad we normally make at home.


White fungus salad is light, fluffy and got some crunch to it. You can simply enjoy the salad by itself or as a side dish. In hot summer days, I can have the salad itself as lunch.


You'll normally find these kind of mushroom comes only in dried form therefore it requires to be soaked in a bowl of water for some times. After 30 minutes you will start to notice the dried mushroom expanding. Do not take it out of the water even when you see it expanding.



Soak it in the water for at least an hour. After an hour feel the mushroom and see if it is nice soft and bouncy. It there are dried and hard spot left, leave it to be soak in water for another 30 minutes. Afterwards, make sure to wash it in a bowl of water 2-3 times to ensure there are no sand.


Once the mushroom is washed, squeeze excess water and pat dried with either paper towel or tea towel. Afterward chop the mushroom about 1-1.5cm thick. Then you are ready to make White Fungus Mushroom Salad.


In a 100g package of dried white fungus you will get about 3 mushrooms so one mushroom is approximately 33g.


 

Ingredients (1-2 serve)


1 dried white fungus mushroom

5 teaspoon full of shredded cabbage

4 tablespoon full of diced tomato

2 tablespoon full of sliced shallot

1 small red chili

2 tablespoon roasted chickpea powder

2 tablespoon pounded dried shrimp

1 teaspoon fish sauce

1 1/2 tablespoon tamarind water

2 tablespoon garlic, onion oil

a slice of lemon



 

Preparation


  • Soak dried white fungus mushroom about an hour.

  • Wash it in a bowl of water about 2-3 times.

  • Squeeze out excess water.

  • Pat dried the mushroom using tea towel.


While leaving the mushroom to soak in water prepare other ingredients.


  • slice cabbage thinly.

  • slice half a shallot thinly

  • dice half a tomato

  • chop chili

Methods


  • Place all the ingredients into a bowl.

  • Mix them thoroughly.

  • Taste and adjust salt and sour content to your liking.

  • You may also add thinly sliced cucumber, mint or coriander to the salad.
