Burmese Pickled tea leaf & rice salad

Rice is one of the main sources of Carbohydrate and is known for having it with curry and making fried rice. In Burma we make rice salad with a variety of flavours. The basic rice salad is made with rice, fish sauce, garlic and onion oil. Then we add other ingredients to add to the flavour.

If you live in Myanmar and buy the pickled tea leaf from one of the street market, it is most likely you will have to clean it and season it yourself. That involves a lot of work and preparation.


If you live in one of the western country and know where your local Burmese grocery store is, you may be able buy ready made pickled tea leaf which is already seasoned and ready to eat.


Personally, if you are going to buy ready made pickled tea leaves, I prefer 'Saw Moe Pickled Tea Leaves Tips'. It is packaged in a glass jar and you can get it in original and spicy flavour. Of course my choice is the spicy flavour.


For the assorted fried beans and nuts, you may be able to get them at your local Burmese grocery store. If you can't source them, an alternative would be to add just roasted peanuts.

 

Ingredients (1 serve)


1 cup of cooked rice

1 tablespoon of shredded cabbage

1 tablespoon of diced tomato

1/2 tablespoon pickled tea leaf

1 tablespoon of fried beans and nuts

1/2 tablespoon of pounded dried shrimp

1 teaspoon of fish sauce

A slice of lemon or lime



 

Methods


Preparation

  • slice cabbage thinly.

  • dice 1/4 of tomato into small cube.

  • wash a handful of dried shrimp with cold water then pound them. Any spare that you don't use can be stored in a zip lock bag in the refrigerator for later use.


To make the salad, simply collect all the ingredients in a bowl and mix them together.



Serve it with fried chicken, sliced cucumber and some chili.
